2 lbs. okra
1/4 C veg. oil
2 C chopped, peeled & seeded tomatoes
1 C chopped yellow onions
1 C chopped celery
1 3.4 tsp salt
1/2 tsp cayenne
5 bay leaves
1/2 tsp dried thyme
2 qts shrimp stock
2 lbs. med. shrimp, peeled & deveined

chopped parsley and thinly sliced green onions for garnish

Directions:

Wash the okra in cool water.
Remove the caps and tips and cut into 1/4' rounds.
Heat the oil in a lrg. pot over med. high heat for 10 to 12 min. or until most of the slime disappears.

Add tomatoes, onions, and celery and cook, stir often for 18 to 20 min. or until the okra and other vegs. are soft and the slime has completely disappeared.
Add salt, cayenne, bay leaves, thyme and water.
Stir and bring to a boil.
Reduce heat to med and simmer uncovered for 15 mins.
Add the shrimp and cook, stir occasionally for 30 min.
Remove the bay leaves and serve in deep bowls.

Andouille sausage can be added and I feel is a great combo with the shrimp.
