2 cups flour
2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 tsp cinnamon
2 cups sugar
1 1/2 cooking oil
4 eggs
2 cups grated raw carrots
1 8 3/4 can crushed pineapple, drained
1/2 cup chopped nuts
cream cheese frosting
Frosting
1/2 cup butter
1 8oz pkg cream cheese, room temp
1 tsp vanilla
1 lb powdered sugar, sifted

Directions:
Directions:
Sift together flour, baking powder, soda, salt and cinnamon. Add sugar, oil, and eggs. Mix well. Stir in carrots, drained pineapple, and nuts. Turn into 3 greased and floured 9 inch pans or one 13x9 inch pan and bake at 350 for 35-40 min.

Frosting:
Combine butter, cream cheese and vanilla. Beat until well blended. Add sugar gradually, beating vigorously. If consistency is too thick, add a little milk.
