12 oz. scallops (10/20 sized) cut in half
2 c. flour
2 Tbsp. olive oil
Kosher salt and ground black pepper
2/3 c. sliced Shitake mushrooms
2 Tbsp. unsalted butter
1 tsp. chopped shallots
1/3 c. Tuaca
4 tsp. peach nectar
2 tsp. lemon juice
1/2 c. heavy cream
1 tsp. Dijon mustard
2 Tbsp. fresh basil, chopped
Garnish: Chopped Italian parsley

Flour scallops and shake off excess flour. In a large saute pan over medium-high heat, saute scallops (seasoned with salt and pepper) in olive oil until browned, about 2-3 minutes per side. Remove scallops from pan and keep warm while making sauce.

To make sauce, saute Shitake mushrooms, butter and shallots over medium heat for 1 minute. Take pan off heat and carefully add Tuaca, then bring pan back to burner and add peach nectar, lemon juice, cream, mustard, and basil. Reduce until thickened. Season to taste with salt and pepper. Add scallops to sauce and serve.
