12 eggs scrambled
1 lb Prosciutto- sliced and cooked a bit
6 cups sushi rice cooked
1/4 cup soy sauce
1/4 cup balsamic vinegar
Topping: 2 Tbsp brown sugar

Directions:
Directions:
Mix together all ingredients and press into a 9 x 9 pan .
Top with 2 Tbsp brown sugar!
Cut into 9 (or however many looks good to you) squares
Wrap into paper foil and take on the go!

OK, admittedly this sounds weird, but I assure you , if you like sweet and savory give this a try!
This recipe came from the Tour De France Radio Shack team chef/ nutritionist. It is a super on the go quick meal, great for breakfast on high endurance days especially for the active kiddos! Tastes much better than nasty Gu energy gels!
