2 c. flour sifted
1 tsp. baking soda
1/2 tsp. salt
1 1/2 c. sugar
1/2 c. vegetable shortening
1 tsp. vanilla
2 eggs slightly beaten
2 large bananas mashed
1/4 c. buttermilk
1/2 c. chopped walnuts or pecans

Preheat oven to 350º. Grease 9x3 loaf pan. Sift together dry ingredients. Beat sugar, shortening, vanilla for 5 mins. Beat in eggs and then bananas by hand. Beat in flour mixture by alternating with buttermilk. Mix just until moistened and spoon into pan. Bake 60 mins. or until richly browned. Cool on wire rack.
