2 Tbsp. unsalted butter
3 oz. proscuitto, diced small
1 c. onion, diced small
3/4 c. carrot, diced small
1/2 c. celery, diced small
1 tbsp. chopped garlic
1/4 c. flour
4 oz. tomato paste
6 c. chicken stock
8 c. canned whole, peeled plum tomatoes, pulsed in food processor or cut with knife
1 Tbsp. salt
1 tsp. ground black pepper
1/4 c. sugar
1/4 c. water
2 Tbsp. white wine vinegar
Garnish: Fresh basil and extra-virgin olive oil

In a thick-bottom soup pot, saute first five ingredients in butter over medium heat. Stir until softened, about 5 minutes. Add flour and tomato paste and cook 3 more minutes, stirring often. Add chicken stock, plum tomatoes,salt and pepper. Simmer on low heat for 30 minutes.

In a small saute pan, mix sugar, water, and vinegar. Cook on medium heat for approximately 5 minutes until caramel color (not burnt) and stir into soup. To serve, ladle into warm bowls and garnish with basil and a swirl of olive oil.
