1 c. squid tubes, cut into 1/3" pieces
3/4 c. flour
2 Tbsp. olive oil
2Tbsp. sliced onions
Kosher salt and ground black pepper
1/2 tsp. chopped garlic
2 Tbsp. white wine
1 tsp. lemon juice
1/4 c. marinara sauce
2 tsp. capers
1 Tbsp. diced tomatoes
Garnish: Red leaf lettuce and chopped Italian Parsley

Pat squid dry between paper towels. Coat in flour and shake off excess. Heat large saute pan over medium-high heat. Add olive oil and squid and spread out with tongs. Add onions and season with salt and pepper. Cook on first side 1-2 minutes until slight crust develops. Turn over and add chopped garlic and cook briefly for 30 seconds, stirring to prevent garlic from burning. Add wine, lemon juice, marinara, capers, and diced tomatoes. Toss until combined and cook for 30 seconds.

Place on warm plate lined with red leaf lettuce and sprinkle with chopped parsley.
