26 medium quahogs
2 loaves stale Portuguese bread
1 small package Pepperidge Farm dressing mix
1 medium onion, chopped
Drippings from ¼ pound bacon
½ stick butter
¼ pound ground chourico
4 eggs
White pepper
Dried parsley flakes

Directions:
Directions:
Sauté onions and chourico in butter and bacon drippings. Wash quahog shells and steam open in about 1 cup of water. Save liquid for dressing. Grind quahogs. Mix all ingredients together adding enough water so dressing is somewhat moist. Place in one or two baking dishes. To bake – cover dishes and set in shallow dishes of warm water. Bake at 350 degrees – for a large dish, 2 hours for a small dish, 1 ½ hours or less.
