18 large jalapenos
3 slices cooked bacon, chopped
1/2 C. diced onion
1 Tbsp. minced garlic
1 tsp. minced jalapeno
1 1/2 C. roasted corn
1 1/2 C. roasted red peppers, chopped
1/2 C. heavy cream
1 tsp. sugar
salt to taste
1 boneless chicken breast, cooked and shredded (2 cups)
1/4 C. barbeque sauce
4 oz. Feta or goat cheese
cilantro
juice of 1 lime

Directions:
Roast jalapenos in oven on broil. Place peppers in a plastic bag to steam for 10 minutes. Rub skin off with a damp towel. "T" slit the jalapenos and remove seeds (wear gloves)
Saute bacon and drain grease. Add onion, garlic, and minced jalapeno. Add corn, red pepper, cream, lime juice, sugar, and salt. Simmer 5 minutes until cream is slightly reduced.
Cook and shred chicken. Add barbeque sauce. Stuff jalapenos with chicken and top with goat cheese. Bake for 8-10 minutes on 350º. Spoon corn relish on jalapenos and garnish with cilantro.
