˝ cup of butter
1 cup sugar
2 eggs
1 cup of cornmeal
1 ˝ flour
2 tsp of baking powder
˝ tsp of salt
1 ˝ cup of milk

Directions:
Directions:
In mixer, cream butter, add sugar, beat in eggs one at a time.
Sift dry ingredients into a bowl and then add them to the wet ingredient in the mixer. Blend slowly at first, because my kitchen aid will create a poof cloud in the kitchen and the flour will get everywhere, mix completely.
Pour in to a 9 x 9 inch greased pan and bake
Bake at 375° for 40 minutes
Use a 9 x 13 inch pan if you’re going to double the recipe and bake until lightly browned and tooth pick comes out clean from the middle of the corn bread.

This recipe I acquired from a nurse friend in the open heart unit, where we spent many hours exchanging recipes, comparing notes on cooking and sometimes just trying not to think about work too much.
