2 extra large quality artichokes
1 Fondue cheese packet (Trader Joe's)
Sour dough bread in cubes (Pulgesse - Costco)

Cut artichoke stems short, invert in deep sauce pan with lid. Add 3/4 inch water. Season cut end of choke with salt, pepper and garlic and herb seasoning. Steam for 45 min. or until heart is knife tender. Cool, then with choke facing up carefully spread leaves out like opening a flower. Remove the underdeveloped center leaves along with the flower down to the heart and discard, leaving heart and outer leaves only. Fill opening with bread. Heat cheese to runny stage in microwave gradually pour 1/2 of cheese in each choke working it down around bread and between leaves of choke. Top with grated Parmesan cheese. Bake at 350º for 15 to 20 minutes. Serve immediately.

Can be prepared ahead of time. If refrigerated, extend oven time a bit. Serve with a glass of white wine, small fork and napkin. This has been a very popular appetizer.
