Chocolate Jelly Roll Ice Cream Cake Recipe

Ingredients: 1 Chocolate fudge cake mix, 3 eggs, 1 1/3 c. water, 1/2 c. oil, 1 quart of ice cream, (any flavor you like)

Directions:Preheat oven to 350º. Line baking pan with parchment paper or wax paper then spray with non-stick spray. Follow cake mix directions and pour into baking sheet. Bake for about 25-30 min. or until a fork inserted in the center comes out clean. When the cake is done turn it over onto a clean dish towel and remove the paper. Let cool for 10 min. and sprinkle with powdered sugar. With the long side toward you carefully roll up cake into the towel and let cool completely on a wire rack. Unroll the cake and spread softened ice cream on the surface fairly thick. Go all the way to the edge of the cake on the long ends. When all the ice cream is spread on the cake roll back up and wrap in wax paper. Leave it on the baking sheet to return it to the freezer. Leave in the freezer for several hours. Slice with a knife to serve. Serve with hot fudge. (recipe for hot fudge found in this cookbook) |

Notes: I made this for Jason's last birthday because when he was little he used to love the jelly roll cakes you could buy in the freezer at the store. This cake has a lot of instructions but is pretty easy to make. Try it, you won't be disappointed. It is so yummy.
