1 C. brown sugar
1 C oil
1 C. pureed pumpkin
2 eggs
1 tsp. vanilla
3 C. flour
1 tsp salt
1 tsp. baking powder
1 tsp baking soda
1 1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. ginger.

Directions:

Cream oil and sugar. Add pumpkin, eggs, vanilla and dry ingredients that have been whisked together in separate bowl. Drop by tablespoons on greased cookie sheets. Bake 10-12 minutes at 350º Cool completely.
Creme Filling
1 C. butter, 1C Marshmallow creme, 1 1/2 cups powdered sugar. Mix until smooth and spread between 2 cookies. Wrap in plastic.

Instead of greasing pan I use parchment or non stick foil. I also use med. sized scoop from Pampered Chef.
