3 cucumbers
2 tablespoons coarse salt

1 tablespoon brown sugar
1 tablespoon rice vinegar
1.5 tablespoons red pepper flakes
1 teaspoon sesame salt (I have been using an asian seasoning mix found at Roches)
1 teaspoon sesame oil
1 teaspoon crushed garlic

Slice the cukes (as thin as you want) and evenly spread coarse salt on them.

Let them stand for 20 minutes. Salt pulls moisture and seasons.

Drain the cukes by either wringing out in a towel or putting them in a strainer and then setting something heavy on top.

Mix all other ingredients together and add to the cukes.

Mix and chill. The longer it marinates, the hotter it gets!
