3 1/4 C grated cooked potato
2 Tbsp melted butter plus 1 Tbsp whole butter
1 Tbsp essence (recipe follows)
1/4 C finely grated Parmesan
2 med leeks, halved and thinly sliced aprox 1 C
(I use green onion)
1/2 tsp minced garlic
4 oz cream cheese at room temperature
2 tsp fresh lemon juice
3 eggs
1 C heavy cream
6 oz smoked salmon
2 Tbsp chopped fresh dill
1/2 tsp salt and 1/2 tsp freshly ground black pepper
ESSENCE: 2 1/2 Tbsp paprika and 2 Tbsp salt

Preheat oven to 425º F. Lightly grease a 9 inch deep dish glass pie plate. In a bowl, combine potatoes, Tbsp of the melted butter and Essence and toss to combine. Add the Parmesan, toss. Press the potato mixture into the prepared pie plate, spreading to evenly cover the bottom and up the sides. Bake until golden brown, 25 -30 minutes, Remove from the oven and cool on wire rack.
Reduce oven to 350º F
Pour the remaining Tbsp of butter into a small skillet over med heat. Add the leeks and saute until softened, about 4 minutes. Add the garlic and cook for 30 seconds. Remove from heat. Place the cream cheese in a large bowl and using a wooden spoon, stir in the leeks and lemon juice. Add the eggs - 1 at a time, stirring just until combined. Add the cream, salmon, dill, salt & pepper and mix well. Pour the cream cheese-salmon mixture into the cooked potato crust and bake for about 30 minutes until golden and batter is set. Serve warm or chilled.
