2 c. cooked diced chicken
1 1/2 c. cooked rice
1 can cream of chicken soup
1/2 c. Miracle Whip© or mayonnaise
1/2 tbsp. salt
"A dash" of pepper
1 tbsp. lemon juice
1/2 c. finely chopped celery (scant)
1/2 c. finely chopped onions (scant)
3 hard boiled eggs, chopped
TOPPING:
1 1/2 to 2 packages Ritz© crackers (or butter crackers)
1/2 stick melted butter

Directions:
Directions:
Mix all ingredients well. Pour into greased (cooking spray) 9 x 13 inch casserole dish. Crush crackers and mix with melted butter. Top casserole.

Bake in preheated oven at 350º for 20 minutes and remove foil. Continue baking additional 15 to 10 minutes (total of 35 to 40 minutes bake time).
