1 medium head of red cabbage, chopped
1 medium onion, chopped
2 medium Granny Smith apples
2 tbsp. olive oil
1/2 cup apple cider vinegar
kosher salt and pepper to taste

Directions:
Directions:
Heat large saute' pan over medium heat. Add olive oil, onion and apples, salt and pepper. Cook until onion is slightly browned. Add cabbage and vinegar. Toss to mix well in the pan. Cover and reduce heat to simmer for about 15 - 20 minutes until cabbage is crisp tender. Serve hot.
