4 tbsp. vegetable oil
1 lb. mushrooms, sliced
1 cup chopped onion
1 cup chopped green pepper
2 cloves garlic, minced
12 oz. tomato paste
1 1/2 cups water
1 1/2 tsp. salt
1 1/4 tsp. oregano
1 box frozen chopped spinach, thawed
1 lb. lasagna noodles
1 cup sharp Cheddar cheese
8 oz. mozzarella cheese
3 tbsp. Parmesan cheese
1 lb. ricotta cheese
1 egg

Directions:
Directions:
Sauté onion, peppers, mushrooms and garlic in hot oil for about 5 minutes. Add tomato paste, water and seasonings. Bring to boil and simmer, covered for 15 minutes. Thoroughly drain cooked spinach and add to sauce. Mix egg into ricotta cheese. Cook lasagna noodles. Spread layer of sauce in lasagna pan. Build layers: noodles, 1/3 ricotta, 1/3 sauce, 1/3 mozzarella, Cheddar and Parmesan cheeses. Repeat these layers twice. Cover with foil and bake at 400º for 20 minutes. Uncover and bake 10-15 minutes longer until cheese is melted. Let stand another 10-15 minutes before serving.
