Chicken in Mole Sauce Recipe

4 tbsp. olive oil
3 cloves garlic, minced
6 chicken hindquarters (leg and thigh)
1 onion, finely chopped
1 green bell pepper, finely chopped
3 jarred pimentos, finely chopped
2 tomatoes, peeled, seeded and chopped
2 tbsp. New Mexico chili powder shopping list
2 ½ c. chicken stock
¼ c. raisins
¼ tsp. nutmeg
¼ tsp. ground cloves
¼ tsp. ground cinnamon
½ tsp. salt
¼ tsp. black pepper
1 tsp. sugar
Grated rind of 1 orange
2 squares unsweetened chocolate

* In a large skillet, heat olive oil and cook garlic just slightly to flavor the oil; add chicken and brown. Remove chicken and place in a casserole or 9 x 13 pan. In remaining fat, cook the onion, green pepper, pimento, and tomato over medium-low heat for 10 minutes. To the onion mixture add chili powder and blend well. Add broth, raisins, cumin, nutmeg , cloves, cinnamon , salt, pepper, sugar and orange rind. Simmer covered 30 minutes. Add chocolate and stir until melted.
* Spoon sauce over chicken and bake covered at 350* for 1 hour or until chicken is tender.

Mole sauce is part of the traditional Mexican cuisine. I truly enjoy this dish because I am a chocolate aficionado and because I like the interesting combination of ingredients.
