4 egg yolks
1 whole egg
5 T. sugar
1 T. butter, melted
2 T. whipping cream
1 T. brandy
1/2 t. ground cardamom
2 c. flour (approx.)
Oil for frying

Directions:
Beat eggs and sugar until very thick and light yellow in color. Add cooled melted butter, cream, Brandy and cardamom. Gradually add flour until dough is stiff enough to roll. May have to add last flour by kneading in by hand. Roll very thin (less than 1/4 inch thick); cut into 1 inch strips. Then every 3 inch increment, cut diagonally to form a rectangular diamond shape. Make a slit in middle of each 'diamond' the long way and pull one end through. Be careful not to tear. Set in a pan and cover each layer to keep from drying out. Heat oil to 360º. Fry in small batches until brown, turning only once. Drain on paper towels. Store cooled Fatteman in air tight container. Dredge in powdered sugar before serving.
