4 T. butter, divided
2 T. finely diced carrots
2 T. finely diced celery
2 T. finely chopped onions
1 cup uncooked wild rice
1 t.salt
2 cups chicken broth
1/2 lb. mushrooms, chopped
1/4 cup chopped fresh parsley
1/4 cup chopped pecans

Preparation Time: 40 minutes
Serves: 4-6

In a 3-4 quart pan, melt 2 T. of butter then add chopped carrots, celery, and onions. Cover and cook for 10-15 minutes, stirring occasionally until vegetables are soft. Stir in rice and salt, cook for 2-3 minutes uncovered. Add chicken broth and bring to a boil. Cover and reduce heat to simmer. Cook undisturbed for 20-25 minutes or until rice is tender and has absorbed all the stock. While rice is cooking melt the remaining 2 T. of butter in a medium saucepan. Add mushrooms and parsley. Stir while cooking for 5 minutes. Add chopped pecans. Cook 2-3 minutes more. Stir contents of the skillet into the finished rice. Taste for seasoning. Serve with fish, poultry, pork or wild game.
