3 cloves minced garlic
1 large onion, chopped
4 large carrots, chopped
4 celery stalks, chopped
1 small bag baby spinach
1 c. fresh green beans
3 zucchini chopped ( leave separate to add to completed soup in bowls)
1 can garbanzo beans
1 or 2 cans red kidney beans
2 boxes organic green range chicken broth
Fresh ground pepper to taste
1 tsp. kosher salt
1/2 c. fresh chopped basil
1 tsp. dried or 1/4 c. fresh oregano
1 c. good red wine (optional)
1/2 c. tomato paste (I prefer the paste in a tube)
3 T. olive oil
Pecorino cheese
2 c. whole wheat pasta shells,

Directions:
Directions:
Heat olive oil in a large stock pot. Add garlic, onion, salt and pepper
Saute until almost clear. Add carrots, celery, and green beans cook for about 5 min. on medium heat. Then add broth, cans of beans, basil, oregano, spinach, wine, tomato paste and cook until vegetables are crisp tender.

To Serve:
Place pasta shells in bottom of bowl (amount is up to you) and pour soup over pasta. Top with zucchini and cheese. You may add dried peppers to each bowl if you wish.

Serve with a lot of love and a great glass of red wine!
