2 Cucumber (chopped)
1 small Red onion (chopped)
4 stalks Celery (chopped)
8 oz mushrooms (remove stems, slice)
Summer sausage (optional)
1 box Rotini rainbow pasta
8 oz. Monterey Jack finely shredded cheese
DRESSING:
1 tsp Accent
1 tsp Parsley
1 tsp Black pepper
1 tsp Onion powder
1 tsp Dill Weed
1 1/2 cup Sugar
1/2 cup Oil
1/2 cup Vinegar

Directions:
Directions:
Boil pasta according to package directions, drain and rinse well with cold water to cool down. Mis dressing together. In a large bowl, combine pasta, veggies, cheese, summer sausage and stir in dressing. Let sit in frig overnight. Stir well before serving.

Vegetarian version: omit summer sausage
