1 pound dried navy beans
7 c. chicken stock
4 T. butter
1 T. minced garlic
3/4 c. diced onion
1 1/2 c. green chilis
1 pound boneless chicken breast
1 T. ground cumin
1 T. dried oragano
2 t. ground black pepper
1/2 t. white pepper
pinch red pepper flakes
1/2 bunch cilantro leaves, chopped

Rinse beans well, cover with cool water. Soak 2 hours. Drain. Place beans in large pot with chicken stock and bring to a boil over high heat. In a saucepan, heat butterover medium heat. Add garlic, onion, chilis, and saute for 5 minutes. Add to beans. Add chicken, cumin, oragano, pepper flakes, black pepper, white pepper, and cilantro. Lower heat to medium, Cook 1 1/2 hours, stirring occasionally. Serve with cornbread, if desired.
