1 1/2 C flour
3 Tbsp sugar
3 Tbsp baking powder
1 tsp salt
1 C milk
2 eggs
3 Tbsp melted shortening or oil

" pinch of buckshot (keeps them from floating away) "

Directions:
Directions:
Mix dry ingredients together and form a well in the center. Beat milk, eggs and shortening well and add to dry ingredients. Fold with a spoon just until flour is incorporated, Do not over mix. Preheat a griddle or fry pan. Grampa would put a few drops of water on the pan and if they danced around the pan was hot enough. Pour batter onto griddle and wait until bubbles form on top of pancake. Grampa would tell you not to peak at underside. Flip pancake and wait until other side is done. Serve

We have all enjoyed Grampa's pancakes, served with a happy face or any other face you asked for. Grampa loved cooking breakfast, especially outdoors. We all have waited in line for a stack of hot cakes served with maple syrup.
