6 eggs
1lb. Mascarpone cheese
36 ladyfingers
21/2 cups espresso
1/2 cup dry Marsala wine
13 T. sugar
3 T. unsweetened cocoa

Directions:
In large bowl use an electric hand mixer to beat the egg yolks together with the sugar until fluffy
Add mascarpone cheese and mix it with a spoon until well combined.
Now whip the egg whites until stiff peaks form and fold gently into mascarpone mixture using a spoon, lifting the mascarpone mixture from the bottom to the top.
Add the cocoa to 1/3 of mascarpone mixture and mix well.
Spread half of remaining mascarpone mixture without cocoa onto bottom of cake dish.
Quickly dip both sides of ladyfingers into espresso and place onto mascarpone cream.
Cover this layer with all the mascarpone cream.
add the Marsala wine to rest of coffee and dip lady fingers into it. Place them over mascarpone chocolate cream and top with remaining mascarpone cream.
Sprinkle top with cocoa powder through a fine mesh strainer.
Refrigerate for 24 hours.
