1 Yellow Bell Pepper
1 Medium Yellow Onion
1 Bundle Cilantro
1 Package Trader Joes Pre Cooked Pork Carnitas (Pulled Pork)
Mccormicks Fajita Seasoning (1 packet)
Seracha Sauce
Package of Kraft Shredded Mexican Blend Cheese
Margerine
Medium Size Soft Flour Tortillas
Ground Ginger (optional)

"Juliane" chop bell peppers and onion into edible bite sizes. Rinse the bundle of cilantro under cold water and shake dry. Pull apart bite size chunks off the pre-cooked pulled pork carnitas. Find a frying pan that is big enough to lay down one whole tortilla and preheat on high. When it reaches a toasting temperature turn back down to medium. Preheat a medium saucepan on high untill it reaches the desired searing temperature for the bell peppers and onion. Add a tbsp. margerine and the prepared bell peppers and onions into the medium saucepan. Keep things moving in the pan. Once you see a good sear to start on the peppers and onion add your desired amount of pulled pork to the saucepan and turn the pan down to medium heat. Add all seasonings listed as well as seracha sauce as desired. Take the pan to the sink to add a splash of water (just enough to help the powdered seasonings you just added into a sauce-like consistantsy). Now get out your cheese, tortillas, and cilantro to have them ready to add to the tortillas as you toast them. One at a time add one tortilla to the pan you choose to toast them in. Spread a good layer of cheese over the whole exposed side of the tortilla. Add as desired, the contents of the saucepan mixture over the cheese only covering one half of whole tortilla. Also tear off the desired amount of cilantro and add to the quesadilla. Fold over one half of the tortilla making a half circle shaped quesadilla and give it a good squish with your spatula. This will help the cheese melt and keep things from falling out when you plate. Repeat the toasting, adding the cheese and folding to make 4 quesadillas.
