24 medium quahogs
1 pound ground pork
1 red bell pepper, chopped
1 large onion, chopped
2 stalks celery, chopped
2 packages of Pepperidge Farms stuffing mix (Kellogg’s croutons no longer available)
1 teaspoon liquid red pepper
3 eggs, beaten
1 tablespoon garlic
2 tablespoons chopped fresh parsley

In a large covered pot with 1 – 1 ˝ inch of water steam open quahogs. Watch for boil over. In a large skillet, sauté ground pork, then add onions, pepper and celery. Cook until almost soft. Add parsley, liquid pepper and garlic. Set aside. Grind cooked quahogs. Add to skillet along with stuffing, eggs, and enough clam juice to soften stuffing mix. Cover on low for a few minutes. When soft, stir together. Stuff the quahog shells. Cover with aluminum foil. Bake at 350 for 30 minutes.
