1/2 cup chopped garlic
1/2 cup rice or white wine vinegar
1/4 cup water
1/4 cup extra virgin olive oil
1/4 cup grade seed or corn oil
2 tbsp. dried oregano
2 tbsp. dried rosemary
1 lemon, sliced
1 tsp. red pepper flakes
1 tsp. coarse ground black pepper
2 tbsp. salt
1 tbsp. sugar
2 small chickens, quartered

Directions:

Combine all the ingredients in a bowl and pour the mixture over the chicken and marinate overnight. Cover with plastic wrap.
The next day, remove the chicken from the marinade (but don't wipe all the herbs off the skin) and season with salt and pepper.
You can cook the chicken on the grill, or, if you're using an oven, place the chicken on a roasting rack on a rimmed baking sheet and broil for 5 minutes on the highest setting to crisp the skin. Place chicken on the middle rack and bake at 350 for 20 minutes. Serve.
