1 leftover turkey carcass
3 medium onions - chopped
2 large carrots - diced
2 celery stalks - diced
1 cup butter - cubed
1 cup flour
2 cups half-and-half
1 cup uncooked long grain rice
2 tsp. salt
1 tsp. chicken bouillon granules
3/4 tsp. pepper

1. Place carcass in a large kettle and cover with water. Bring to a boil. Reduce heat, cover, and simmer for 1 hour. Remove carcass to cool. Strain 3 quarts of the turkey broth and set aside. Remove turkey meat from bones. Cut into bite-size pieces and set aside.
2. In a large kettle, saute the onions, carrots and celery in the butter until tender. Reduce heat and stir in flour until blended. Gradually add 1 quart of the reserved broth, whisking constantly. Bring to a boil, cook and stir for 2 minutes as it thickens.
3. Add cream, rice, salt, bouillon, pepper, remaining broth and reserved turkey. Cover and simmer for 35 minutes, or until rice is tender.
