3 cups chopped tomatoes - drained well
6-8 chopped green onions
2 cans black beans
1 cup fresh or frozen corn
1 red pepper - chopped fine
2 minced jalapeņo peppers
3 cups cooked rice or couscous
1/4 - 1/2 cup chopped cilantro

Dressing:
6 T. lime juice
6 T. olive oil
1 tsp. ground cumin
2 tsp. vinegar
1 tsp. salt
1/4 tsp. pepper
1 tsp. sugar

Directions:
Directions:
Toss first 7 ingredients together in a large bowl. In small bowl, whisk together dressing ingredients. Pour over salad and toss all together. Salad tastes better each day. Also makes a great dip for Fritos or tortilla chips.
