I sweet onion thinly sliced,
2 packages fresh mushrooms sliced,
2 Cloves Garlic/ Minced,
4 chicken breasts,
2 Cups Dry Marsala Wine,
2 Cups Chicken Stock,
salt & pepper to taste,
Panko bread crumbs,
1 egg
Extra virgin olive oil

Directions:
Directions:
Pound chicken to flatten, dip in egg and then panko crumbs. Brown the chicken in olive oil and then set aside.
Saute the onions, mushrooms and garlic until carmelized then add chicken stock and marsala wine and simmer for 10 minutes covered. Add browned chicken breasts and cook uncovered for another 20 minutes until sauce thickens.

I keep additional chicken stock and marsala wine to the side and add as I feel it is needed because I am a sauce girl and like extra ;)
