2 lbs your favorite steak, cut in
strips
1/2 cup sliced onion
1 tsp butter, oil or non-stick spray
8 soft taco style flour tortillas
2 cups Mexican blend shredded cheese
sour cream
Pace mild salsa
2 tomatoes, diced
shredded iceberg lettuce

Directions:
Directions:
Lightly sear or grill steak strips. Combine steak with onion in skillet. Cover and cook on a low heat. In a separate skillet, add butter, oil or non-stick spray. Place one tortilla in the pan. Put steak and onions on half of tortilla and sprinkle with cheese. Fold the tortilla in half and cook on both sides until tortilla is crisp. Serve with lettuce, tomatoes, sour cream and salsa on the side.

I like to serve with a side of Spanish rice.

This would also be great with skinless, boneless chicken breast strips
