1lb. boneless chicken 1tbsp. olive oil 1 medium onion, chopped 1 small red pepper, chopped 1 clove garlic 1 15oz. can chili with no beans 1 14oz. can stewed tomatoes 2 c. cooked rice 3/4 c. Monterey Jack cheese, shredded

Cut chicken in large strips and saute in oil. Set aside. In same pan saute garlic, onion and pepper until tender. Stir in chili and tomatoes, heat through. Add rice and chicken. Simmer 10 minutes. Top with cheese, let it melt and serve.
