1/4 TO 1/2 CUP OLIVE OIL
1/2 CUP PACKED FRESH BASIL LEAVES
1/4 TSP. SALT

HEAT YOUR OVEN TO 400. DRIZZLE 1/4 CUP OF THE OLIVE OIL IN A BAKING SHEET AND ADD THE TOMATOES AND SALT AND TOSS. PLACE THEM IN THE OVEN AND MAKE SURE THEY DO NOT BURN. ABOUT 15 MINUTES. ONCE THEY HAVE SHRIVELED AND GIVEN UP ALL THEIR JUICE THEY SHOULD BE DONE. REMOVE THE TOMATOES AND LET THEM COOL. WHEN THEY ARE COOL ENOUGH TO HANDLE, SCRAPE ALL OF THE IN THE BLENDER AND ADD THE FRESH BASIL. PUREE THE MIXTURE, PULL THE TOP OFF THE BLENDER AND GRADUALLY ADD THE REMAINING 1/4 CUP OF OLIVE OIL A LITTLE AT A TIME UNTIL EMULSIFIED.

COULIS ARE A THICK PUREED SAUCE MADE FROM ANY FRUIT OR VEGETABLE. THESE SAUCES ARE SMOOTH AND THICK. STRAINING IS SOMETIMES RECOMMENDED. A TOMATO COULIS IS GREAT ON PASTA, BRUSCHETTA OR ANY TYPE OF VEGETABLE OR MEAT OR ADDED TO OTHER SAUCES.
