4 c. carrots sliced
1 medium onion, chopped
3 tbsp. butter
1 can cream of celery soup
1/2 tsp. salt
pepper to taste
1/2 c. diced Velveeta cheese
3 c. herb flavored croutons

Directions:
Directions:
Cook carrots in salted water until tender crisp. Saute onions in 3 tbsp. butter. Combine soup, salt, pepper, and cheese. Heat together to melt cheese. Add carrots and 2 c. croutons. Put in casserole dish. Top with remaining croutons. Bake at 350º for about 1/2 hour.
