2 1/2 lbs pork (boneless pork chops)
1 1/2 Tbsp margarine
carrots sliced diagonally (about 1 bunch)
green popper
medium onion
1 - 15 1/2 oz can pineapple chunks
Bar-B-Q sauce (Heinz Thick Rich with Honey Fat Free)

Brown pork (cut in cubes) in margarine. Drain pineapple chunks (save juice). Add enough Bar-B-Q sauce to juice to equal 1 cup - if you like add 2 Tbsps vinegar to sauce. Slice carrots, peppers and onion. Add sauce, carrots and onion to pork. Bring to boil, reduce to simmer, cover and cook 15 minutes. Next add peppers and pineapple chunks and cook an additional 5 to 7 minutes.
Serve over rice or as a side dish.
