8 tbsp. unsalted butter, divided
1/2 c. all-purpose flour
4 c. milk
4 c. sharp cheddar cheese, shredded
3 c. cooked rice
1 c. frozen small broccoli florets
2 medium-sized chicken breasts, cooked and cubed (optional)
1/2 tsp. black pepper
1 tsp. salt
1/2 tsp. nutmeg
Non-stick cooking spray

1. Pre-heat the oven to 375º. Spray a 9"x13" dish with non-stick cooking spray.

2. Heat the milk in a small saucepan, but do not allow it to boil. Melt the butter in a larger pot (4 qt.) and whisk in the flour all at once. Cook over low heat for 2 minutes and continue to whisk. Stir in the hot milk and cook for another 1-2 minutes until thickened and smooth. Off heat, add salt, pepper, nutmeg, and 2 1/2 c. cheese.

3. In large mixing bowl, combine cooked rice, frozen broccoli florets, chicken (if desired), and cheesy béchamel sauce. Pour into 9x13 dish and top with remaining 1 1/2 c. cheese. Bake for 15-20 minutes or until top is bubbly and golden.
