2 tbsp extra virgin olive oil

1 1/4 lbs carrots, sliced diagonally, 1/2 inch thick

12 garlic cloves, halved

salt and fresh ground pepper

Directions:
Heat the oil in a large skillet. Add carrots and garlic and brown for about 15 minutes over gentle heat, stirring occasionally. Season with salt and pepper.

If you are in a hurry, you can cover the carrots for part of the cooking so they steam a bit and are ready faster, but it is best not to cover them. The carrots will not absorb the oil and will come out crunchy on the outside and soft on the inside. Delicious! The kids love them, though they pick out the garlic bits and give it to their mom, who happily eats them.
