4 Baked Potatoes
1-2 handfuls of Cheddar Cheese
1/2 lb. Bacon
Sour Cream
Chives
Parsley
Salt
Pepper

Directions:
Bake 4 Baking Potatoes (or the equivalent of salt potatoes) until soft ( I bake them at 400º)

While the potatoes are cooking, crisp up 1/2 pound of bacon.

Once cool, cut potatoes into bite size pieces (you can leave the skins on if the potatoes are young or salts)and place in a mixing bowl. Crumble the bacon into the potatoes. Put in a handful or two of cheese. Add chives and parsley to taste. Mix with sour cream until texture you prefer (usually 16 ounces or less is enough). Salt and pepper to taste.
