2 whole boneless, skinless chicken breasts (4 pieces)
3 celery stalks, diced
20+/- black olives, pitted & chopped
1/2 cup Mayonnaise (lite if you want)
2+ teaspoons curry powder
Lemon juice

Directions:
Directions:
Cook chicken breasts by simmering in water with some celery, carrots & onion. When done (about 20 minutes), cool breasts and shred or dice them. Add celery and olives to chicken. Separately, mix mayonnaise and curry powder with enough lemon juice to give adequate moisture (consistency of salad dressing). Combine chicken mixture and curry dressing. If not moist enough, add more mayo & lemon juice. Curry should be added as desired. Chicken salad should have deep yellow color. Add salt and pepper to taste.

Enjoy the salad as a sandwich with lettuce & tomato. Or to make an entree, serve the chicken salad over chilled cooked white rice which has been mixed with French dressing (bottled will do) and chopped fresh parsley. Serve all on a bed of lettuce! Serves 4+.

My friend, Trine Nielsen, first served this chicken salad back in the 70s in Winnetka, IL. It's a delicious alternative to traditional chicken salad and easy to prepare. In my opinion, the best prepared chicken salad can be bought at Straub's in St. Louis!
