Pond raised catfish fillets (1/2 lb. per person)
Yellow Cornmeal
Table Salt
Black Pepper
Deep Fat Fryer
Peanut Oil

Directions:
Directions:
Heat oil in deep fat fryer to 355º.

Empty cornmeal into bowl and season with salt and pepper. Taste it to see if seasoning is correct. (Yeah yuk! but it's the only way).

Roll catfish fillets in cornmeal mix shake, and slip into hot deep oil. Cook until they float - they should be done and crispy brown and not over cooked.

Remove and serve with all the fixings, hushpuppies, French fries, ketchup, hot sauce, tartar sauce and cole slaw.
