1 cup margarine
4 eggs, beaten
4 cups flour
2 cups sugar
2 ˝ cups applesauce
1 tsp. soda
2 tsp. baking powder
1 tsp. cinnamon
1 tsp. apple pie spice
2 cups raisins
2 ˝ cups chopped nuts
1 small can crushed pineapple
1 tsp. vanilla
2 tsp. lemon
3 ˝ cups mixed fruit used in fruit cakes

Cream shortening and sugar together. Add eggs; beat well. Add applesauce and pineapple. Add sifted dry ingredients and beat. Fold in raisins, nuts, & fruit. While cake is hot, squeeze juice from orange on top. Keep in refrigerator. Can be frozen.

Can use just red and green candied cherries in place of mixed fruit. Can adjust amount of pineapple used or not use at all.

Bake at 300 degrees. 1 ˝ to 2 hours. Makes 3 loaf pan cakes.
