5 1/2 lbs. sweet potatoes
1/3 c. dark brown sugar, firmly packed
1/4 c. butter or margarine, room temp.
1 (8.5 oz.) can crushed pineapple, drained
3 T. reserved pineapple juice
1/2 tsp. ground allspice
1/4 tsp. nutmeg, freshly grated
1/8 tsp. black pepper

Directions:
Directions:
Preheat oven to 400ºF. Bake potatoes in oven for 1 hour or until fork tender. Cool completely. Slip off skins, and mash potato pulp in a large bowl. Beat in sugar, butter, pineapple, pineapple liquid, allspice, nutmeg and pepper. Spoon mixture into greased 3 qt. casserole dish. Bake uncovered at 350ºF for 35 minutes or until heated through.
