Cous Cous with Chicken and Zucchini Recipe

Dressing:
1/2 c. Olive Oil
1/3 c. Fresh Lemon Juice
1 Lg. Clove Garlic (minced)
1 tsp. Cumin
1 tbsp. Red Pepper Flakes
2 Handfuls Fresh Chopped Herbs. (Cilantro, Italian Parsley, Mint)
Some salt and freshly ground pepper.

2 c. Whole Wheat Cous Cous
2 c. Chicken stock or broth
4 boneless, skinless chicken breasts
3 Zucchini
1/2 c. halved and pitted black olives
1/2 c. Toasted sliced almonds
1 c. halved Grape Tomatoes

Make Dressing First. Combine in bowl and let sit for at least an hour.

Make 2 cups of whole wheat cous cous with 2 cups chicken stock or broth per directions on box. Fluff with fork and set aside.

Heat large skillet to med. High

When hot add 2 Tbsp (ish) Olive Oil, heat a few seconds, then brown 4 boneless, skinless chicken breasts. Salt and Pepper each side as the other side is browning. Remove chicken and let rest on plate. Immediately add 3 zucchini, cut in 2 inch x 1/2 inch strips to pan and cook till almost soft.

Let chicken rest for 5-10 minutes, then slice and chop into bite sized pieces.

Add Chicken and Zucchini to cous cous, then add black olives, toasted sliced almonds, and grape tomatoes.

Add Dressing to mixture and stir. Taste--add more whatever you like and tope with more chopped herbs and toasted almonds.
