5 cups zucchini, peeled & shredded
1 1/2 cups chopped onion
1 3/4 cups chopped green peppers
may add red bell peppers as well

Directions:
Directions:
Add 2 1/2 Tbsp coarse salt and let stand overnight. Drain well. Add 1 tsp garlic powder, 1 cup brown sugar, 1 tbsp corn starch, 2 tbsp dry mustard, 2 cups white vinegar, 2 tsp red pepper flakes *more or less depending on how hot you like it*, 1 tsp black pepper, 1 tsp tumeric, 1 quart tomatoes (canned works best) and 1 - 2 small tins tomatoe paste.

Mix well, simmer for 30 minutes. Fill sterilized jars and process for 30 minutes.
