1 - 2 1/2 LB BONELESS PORK LOIN ROAST
1 MED ONION SLICED ( ARRANGE ON TOP)
2 CUPS YOUR FAVORITE BARBEQUE SAUCE
1/2 CUP SALSA
2 TBS CHILIE POWDER
2TB CUMIN
1/2 TSP GARLIC POWDER
1/2 TSP OREGANO
1/4 TSP PEPPER
1/8 TSP RED PEPPER ( CEYANE) OR TO TASTE
1//2 TSP SALT

MIX ALL OF THE SPICES AND SAUCES TOGETHER AND POUR OVER THE PORK IN THE CROCK POT
ARRANGE SLICED ONIONS ON THE TOP

COOK IN CROCK POT ON LOW FOR UP TO 8 HOURS, IT'S DONE WHEN ITS TENDER.

REMOVE THE ROAST AND PULL APART WITH A FORK
RESERVE THE SAUCE TO SERVE ON THE SIDE.

SLICE AND SAUTE
1 SWEET ONION
1 RED PEPPER
1GREEN PEPPER
( LET THE ONION COOK UNTIL SOFTENED BEFORE YOU PUT IN THE PEPPERS)
EVEN BETTER IF YOU TAKE THE TIME TO CARAMELIZE THEM, 20 -30 MIN ON LOW IN SOME EVOO, A LITTLE BUTTER TO FINISH.

SERVE WITH THE SAUTEED PEPPERS AND TORTILLAS , FAJITA STYLE.
