6 1/2 to 7 lbs stew meat
3 cans(reg size) Niblet corn(drained)
4 cans diced tomatoes, seasoned w/spices
2 (11.5 oz) cans of V-8 juice
1 (11.5 oz) can of tomato juice
2 bell peppers, chopped
4 lbs potatoes, chopped
2 (1 lb) pkgs frozen lima beans rinsed
1 lb pk frozen mixed vegs
1 lb pk frozen cut okra
1 lb pk small carrots, cut up
2 large onions, cut up
1 stalk celery, chopped
4 - 6 cups beef broth
Up to 1 gal of water(maybe add more water, V-8 or tomato juice.

The night before cook your stew meat and put in a cool place when done. The next morning skim the fat off the top. Put the meat and broth in the pan in which you plan to cook the stew.(This makes 4 gal. plus. I use a 16 qt pan and it was almost to the top.). After broth settles carefully dip out broth and put over stew meat. Add frozen and canned items. Add water. Chop and add fresh vegetables. ( I have tried frozen and canned vegetables but the stew doesn't taste as good as it does when you use fresh.) You can chop the fresh vegetables the day before and put in a ziplock bag overnight in the frig. Bring to a boil, stirring often. Cut down to simmer. Just be sure you can see little bubbles breaking at the top. You will still need to stir some as it seems to stick. I cook it on simmer 4 to 6 hours. Vegetables such as pepper and celery will still be a little crunchy. Potatoes will be tender but not mushy. Did not use any salt or pepper.

This is my Uncle Wheeler's famous beef stew with a little adjustment from his wife Janice. Wheeler has made this many times for fun raisers at his church as well as for family gatherings! Yum!!
