1 tsp. Sesame Oil
4 oz fresh Ahi Tuna
2 TBL Franks Red Hot Pepper Sauce (or your fave)
1/4 C. Micro greens
1 tsp. Sesame Seeds (divided into 2 half tsp)
1/4 C. Pomegranate Seeds
6 Maki (Seaweed) strips

Cut Ahi into equal size small squares. Mix with pepper sauce and salt to taste
Lightly grease 6 oz ramekins w/sesame oil
Line ramekin with the maki strips - 3 covering bottom, 3 around the edge
Firmly press the micro greens into the bottom of the ramekin
sprinkle 1/2 tsp of sesame seeds over micro greens
Gently layer the tuna a top the sesame seeds
Sprinkle remaining seeds atop the tuna
Sprinkle the pomegranate seeds atop the tuna/sesame seeds
Gently press down (use wax paper for even pressure) to compress the contents.
Refrigerate for at least 2 hours.
Place ramekin upside down on plate.
Sprinkle with Wonton strips or crunchy Chinese noodles.
