2-3 14.5 oz cans diced tomatoes
1/3 of a bunch of fresh cilantro
1- 1 1/2 tsp. minced garlic (depending on how much you like garlic, or if you're going to be with company soon!!!)
1 small onion, chopped
1 1/2 tsp. salt - (may need more)
If you want spice you can use red pepper flakes, a fresh jalapeņo in blender with tomatoes, or 1 can diced tomatoes with jalapeņo

Drain most of juice from canned tomatoes, a little juice is fine. Dump one can at a time into blender and hit pulse until big chunks are gone (2-3 times). Pour into a bowl and add rest of ingredients. I trim about 1 in. of stems off of cilantro and then fold the small bunch in half and cut the rest up into small pieces with scissors.
